Bean Sauce Noodles

1 lb. egg noodles (I use linguini noodles)
1 lb. ground pork
1 c. shredded cucumber
3 T. bean sauce
3 T. hoi sin sauce
3 T. ketchup
3 garlic cloves minced
1/4 tsp. white pepper
1/4 tsp. salt (optional)
1 tsp. sugar (or more to taste)
1/4 cup chicken broth or water

In wok or large frying pan brown pork, garlic, bean sauce, hoi sin sauce and ketchup. Add remainder of seasonings and broth. Mix well. Cook noodles as directed on package & place in serving bowl. Spoon pork mixture on one side of noodles and garnish other side with shredded cucumber. Serve.

*If you like you may add crushed chili peppers to add a little zip to it!

Potato Latkes

3-4 medium potatoes
1 large egg
1 t. salt
1 heaping tablespoon flour
1 small onion
cooking oil

Pare and grate potatoes. Drain thoroughly. Add egg, salt, flour and mix thoroughly. Grate onion into mixture. Mix well. Cover and place in refrigerator for 30 minutes. In a skillet, heat oil until quite hot. With a tablespoon, drop potato mixture into skillet. Flatten pancake with back of spoon for thin crisp. Fry on both sides until brown.

Serve with sour cream, apple sauce or just plain.

Prune Cake

2 c. sugar
2 c. flour
1 c. vegetable oil
3 eggs, unbeaten
1 c. buttermilk (or sour milk)
1 c. cooked prunes (24-25 prunes), unsweetened
1 t. salt
1 t. baking soda
1/2 t. allspice
1/4 t. ground cloves
1 t. cinnamon
1 t. vanilla
1 c. nuts

Combine all of the ingredients in a large bowl and mix. Transfer into greased tube pan and bake at 350 degrees for 45 minutes to an hour.

Farmers Cabbage with Smoked Sausage(Boerenkool met Worst)
Yield: 6 servings

6 Good-sized potatoes
1 Bunch of kale (to fill a 2 quart pot)
1 lb Smoked sausage
3 T butter or margarine
Salt and pepper

Peel, cook, and mash potatoes. At the same time, finely chop kale and cook until tender. Dice and cook sausage. Put kale into a blender with enough of the cooking water to make a thick slurry. When done, add to the mashed potatoes. Add cooked sausage. Add butter. Salt and pepper to taste. Mix well and serve piping hot. For a more festive appearance, put into a casserole dish, garnish with slices of gouda cheese or a medium cheddar and sprinkle with paprika. Place in medium oven until cheese melts and begins to brown. Serve.

Lip Smackin' Tater Pie

1 cup cooked sweet potatoes (yams may be used)
1 t. of cinnamon
1 t. vanilla
1/8 t. nutmeg
1/8 t. Allspice
1/2 c. sugar
1 egg
1/2 c evaporated milk
1 ready pie crust (or make from scratch if you dare)
1 stick of butter

Preheat oven to 350. When selecting potatoes, choose those medium in size and not too dense. Boil the potatoes until they can be pierced easily with a fork. While the potatoes are cooking, mix all your dry ingredients in a bowl. Beat the egg and put to the side. When the potatoes are done, run them under cold water but be careful to keep the potato hot so the skin comes off easily. After you have peeled the potatoes, put them in a bowl and add stick of butter. Mash the potato with a masher or fork until most of the lumps are out. Add the dry ingredients and mix. You can always add more sugar if you need to. Add the egg, then the vanilla. Slowly add the evaporated milk to make a creamy but firm batter. (You might not use all of the milk.) Be very careful not to make it too soupy. Pour into the crust and bake for 30-45 minutes or until crust is nice and brown. Makes 1 pie.
