Assistant Professor of Philosophy Alexandra Plakias ’02 recently moderated a panel discussion exploring the history, psychology, and ethics of entomophagy, as well as culinary uses of “the most delicious insects.”
“Buggin’ Out: a Panel Discussion of History, Psychology and Ethics of Entomophagy” took place on May 22 at the Brooklyn Navy Yard Farm, a 1 ½ acre rooftop farm built by Brooklyn Grange.
Panelists included chef and restaurateur Mario Hernandez; Robyn Shapiro, creator of cricket-based snack food company Seek Foods; and Louis Sorkin, senior museum specialist in entomology for the American Museum of Natural History.
